After making Ina’s Granola Bars, I realized what a quick, easy and healthy snack they are to make. Instead of following a recipe this time, I decided to make up my own. To tell you the truth I am quite surprised how it turned out. Chewy and delicious. YUM!


  • 2 Cups of Old Fashioned Oats
  • 2 Bags of Original Instant oatmeal
  • 1/2 Cup of Pumpkin Puree
  • 1/4 Cup of Honey
  • 1/4 Cup of Applesauce
  • 1/3 Cup of Brown Sugar
  • 1 Teaspoon of Vanilla Extract
  • 1/2 Teaspoon of Cinnamon
  • 1/4 Teaspoon of Nutmeg
  • 1/4  Teaspoon of Pumpkin Spice
  • 5 Large dates Chopped
  • 1/2 chopped Almonds
  • 1/4 Cup of Cranberries
  • 1 Teaspoon of dried coconut

1.) Preheat the oven to 350 Degrees. Spray a 8 x 8 inch pan and line it with parchment paper.

2.) Pour the oats, dried fruits and almonds into a large bowl. In a separate bowl whisk together the Pumpkin puree, apple sauce, honey, vanilla extract, nutmeg, cinnamon, pumpkin spice and sugar.

3.) Pour the liquid and spices in to the bowl with the oatmeal and dried fruit. Stir with a spatula. Pat the mixture down evenly in the pan. Sprinkle dried coconut on the top. Bake for 25-30 minutes.
